1 container onion powder
1 container garlic powder
1 container of celery salt
1 container poultry seasoning
1 container of cumin
1 container of chili powder
1 container turmeric
1 container thyme
1 container curry (optional)
1 container paprika (can be doubled for color)
salt and pepper to taste

Directions:

Mix together all ingredients, adding alt and pepper, with the same amount of each. Store in a jar for up to two weeks. Use on broiled fish, such as grouper, snapper, pompano, or Spanish mackerel, shrimp, oysters, scallops, or in seafood gumbo.

This was the special mix used by Jesse Cook to coat the top of fresh fish to be grilled or broiled. Jesse create this seafood seasoning mix with his friend "One Eared Mack." He was a friend to Jesse and was a sign painter. He earned the name "One Eared Mack" when he tried to catch a monkey while on a boat in South America. When he finally caught the monkey, it chewed his ear off, and that was where the name came from.
