1 Box White cake mix
3 Eggs
¼ c. Vegetable oil
1 ¼ c. Water or coconut milk
2 c.Sshredded coconut, divided
3 oz. Malibu rum or 7 oz. Cream of Coconut
1 - 8 oz. Tub of Cool Whip, thawed in fridge

Preheat oven to 350º. Spray a 9 x 13 baking pan with cooking spray. Mix cake mix, eggs, oil, water and 1 c coconut until smooth. Pour into pan and spread. Bake 28 - 30 minutes. Remove and poke holes in cake ½ - ¼ inches. Open up your can of cream of coconut and stir well. Pour 7 oz. evenly over hot cake. With spoon spread over parts that got none. Allow cake to cool the put in fridge for 1 hour. Mix cool whip and 1 c. coconut spread over cake. Refrigerate until ready to serve.
