Directions:Preheat oven to 450º
For Dough:
Put water, yeast and sugar into your mixer's bowl and whisk until combined. Let sit until very foamy. Add olive oil and 2 cups flour. Using mixer's dough hook, incorporate the flour into the liquid until smooth. Add the salt. Then add enough flour to make a soft dough, and knead with the dough hook for 5 minutes, adding a little extra flour if needed to keep it from being too sticky.
Separate the dough into 4-6 equal pieces and give to each person to make their own pizza.
For sauce:
In a small bowl mix together the tomato sauce, tomato paste and all the seasonings, stir to combine thoroughly. You don't have to cook this.
Lightly spray a flat pan for each person who is making a pizza. Let each one make their crust into whatever shape they desire - make sure they fold the edges over to make a ridge to hold the sauce in.
Spread desired amount of sauce on the dough. Add mozzarella. Put on whatever toppings you like and as much as you like, your imagination is the limit. I usually have ham, cooked sausage, pepperoni, cooked chicken, spinach, broccoli, olives, bell peppers, onions, mushrooms (only if someone is here who likes them), pineapple and hot peppers.
Sprinkle a little more mozzarella over the toppings to hold them in place.
Bake for 15-20 minutes, depending on size and thickness of the crust - lift up an edge with a spatula to make sure the bottom is lightly browned before removing from oven. |

Notes: Whenever the grandkids come to visit us they always want to have "make your own pizza" and no one's is ever the same as anyone else's. Marissa always makes a stuffed crust. Jadyn always wants just pepperoni and cheese (I remember several "J" shaped pizzas when she was younger, Nataleigh loves mushrooms (she'll eat the raw while making the pizza, Bradley likes every meat you have on his pizza, Alicia likes her crust thin, Regan likes a lot of cheese, Lauren likes hers with ham and pineapple (just like her Uncle Dirt) and Halle always make a really small pizza. Lots of fun memories making pizza!
