1 (4 oz) package sweet baking chocolate
1/4 c. butter (1/2 stick)
1 (13-oz.) can evaporated milk
1½ c. sugar
3 T. cornstarch
1/8 t. salt
2 large eggs, beaten
1 t. vanilla extract
2 unbaked 8" pie shells
1⅓ c. flaked coconut
1/2 c. chopped pecans (more is better)
Whipped cream, chocolate shavings for garnish

Directions:

Combine chocolate and butter and melt in a saucepan. Set aside. Add milk. Combine sugar, cornstarch, and salt. Add eggs and vanilla and mix well. Gradually stir in chocolate mixture with wire whisk. Pour into pie shells and sprinkle with coconut and pecans. Bake at 375º for 40 minutes. (Pie may appear soft but will become firm after cooling) Cool at least 4 hours. Garnish with whipped cream & chocolate shavings.
