1/2 C finely chopped celery
1/2 C finely chopped onion
Cooking spray
2 C water
1/4 tsp pepper
32 oz chicken broth
3 C cream style corn
2 C instant mashed potato flakes
3 C non fat milk
1 C shredded reduced fat sharp cheddar cheese
2 T lemon juice

Directions:
Directions:
Spray large saucepan with olive oil or cooking spray
Sauté onion and celery until crisp tender, about 3 minutes
Add water; pepper, and chicken broth and bring to boil.
Add corn and potato flakes.
Stir in milk and cheese.
Cook over medium heat 5 minutes until cheese melts.
Stir in lemon juice
