5 lbs. plums
2 - 3 lbs. sugar
1 pint of apple cider vinegar
1 teaspoon dried mustard
1 teaspoon cloves
1 teaspoon cinnamon
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon allspice

Pit the plums and boil with vinegar until tender
You can put the plums through a potato ricer or food mill to remove the peels, if desired, then puree in a blender or food processor.That is what I have always done. The last time I made the plum sauce, I placed the cooked plums into my Vitamix and pureed the plums with peels. I don't see an advantage to removing them and with peels, they probably have more nutritional value..
Add spices to plum puree and gently boil until thickened.
Pour into prepared canning jars and store in the freezer until ready for use.

This is an Ingram family recipe that I was introduced to on the folks farm in NY. They served the plum ketchup, as they called it, over Grandma Brown's Baked Beans, a brand that is available in New York. It didn't sound great to me, but is really good!
We use the plum sauce on egg rolls, Chinese dumpling, pork roast. It is delish!
