1 cup red onion chopped
1 cup celery chopped
1 cup green pepper chopped
1 14 ounce can black-eyed peas
1 14 ounce can shoepeg corn
1 14 ounce can pinto beans
1 14 ounce can black beans
3/4 cup cider vinegar
1 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon salt
1/4 teaspoon pepper

Directions:

Rinse beans.

Combine cider vinegar, vegetable oil, water, sugar, salt and pepper and heat to a boil. Cool completely. Pour over beans and refrigerate for 24 hours.
