1 Cup milk
½ Cup (1 stick) butter
1 Cup all-purpose flour
4 large eggs

1. Preheat oven to 425º
2. Coat baking sheet lightly with cooking spray
3. Combine milk and butter in a medium saucepan.
4. Bring to a full boil
5. Whisk flour into boiling milk until mixture forms a ball
6. Remove saucepan from heat
7. Whisk eggs, one at a time into flour mixture until eggs are thoroughly mixed and mixture is smooth and velvety
8. Drop by rounded tablespoons. Bake for 20 minutes
9. Reduce heat to 325º bake until cream puffs are golden brown about 25 minutes longer
10. Pierce cream puffs with a toothpick to allow steam to escape
11. Remove from baking sheet and cool on a wire rack
12. Cut off tops and fill
