Chocolate Sugar Cookie Recipe

Ingredients: 2 c unsalted butter (at room temperature) 2 c sugar 2 large eggs 3 tsp vanilla 4 c flour 1 ½ c cocoa powder 1 tsp salt

Directions:Cream the butter and suggar together on low to medium speed. Mix until thoroughly incorporated-about 1 min. Scrape down the sides of bowl and mix again for a few seconds.Don't overmix.
Add eggs slowly and mix. Scrape down the bowl at least once and mix again
Add vanilla, stir briefly
Sift your dry ingredients together.
Add all the flour mixture to the bowl. Mix on low spped for about 30 sec (its a good idea to place a kitchen towel over the top of the mixer so that dry ingredients to not fly all over the counter and stay in the bowl). Make sure ingredients are combined, but don't over mix
Roll the dough out betwee 2 large pieces of parchment (or waxed) paper. Place on a baking sheet (still in paper) and chill at least 1 hour
Roll the dough further if you need to and cut out cookie shapes. Place on parchment lined baking sheets. Re-rolls scraps and repeat.
Put cookie dough shapes back into the fridge for 10 min to 1 hour. They will then hold their shape better when baked
Preheat oven to 350º
Bake cookies for 8-12 minutes or until the center of the cookie no longer looks wet. Baking time will depend on the size of your cookie.
Cool to room temperature before decorating. |
