½ cup butter, softened
1 cup sugar
1 egg
½ tsp. vanilla
½ cup buttermilk
2 - 3 bananas, mashed
1½ cup flour
½ tsp. baking soda
1 tsp. baking powder
½ tsp. salt
½ cup chocolate chips

Directions:
Directions:
Cream together butter and sugar, then add in egg, vanilla, and buttermilk. Add ripe mashed banana. In a separate bowl, sift together dry ingredients, then add to banana mixture in three parts, mixing well after each addition. Stir in chocolate chips. Grease muffin tins or use paper liners and fill about ⅔ full. Bake at 375 for 20 -25 minutes. Makes about 18 muffins.
