Ingredients: 1 pound baby potatoes quartered 4 ears of corn husked and halved 4 T olive oil, divided 2 T Creole seasoning 1 lemon, juiced 1 T minced garlic 2 t Italian seasoning 1 t paprika, divided 1/2 t red pepper flakes 1 pinch of salt and pepper 1 red bell pepper cut into pieces 1 yellow bell pepper cut into pieces 1 orange bell pepper cut into pieces 1.5 C cherry tomatoes, halved 1 onion cut into pieces 1 ring Mundare sausage 1 lemon cut into wedges 1 lb. uncooked shrimp, peeled and deveined 1/2 t Creole seasoning 2 T parsley Green onion, chopped to taste

Directions:1. preheat oven to 425 degrees. Spray large sheet pan with cooking spray. 2. Place potatoes in pot of salted water and cook for 10 minutes. Add corn and cook for additional 5 minutes. 3. Combine 3 T olive oil, 2 T Creole seasoning, juice from 1 lemon garlic, Italian seasoning, 1/2 t paprika, red pepper flakes, salt, pepper in a small bowl. Mix well and set aside. 4. Combine potatoes, corn, peppers, tomatoes, onion and sausage in a large bowl. Add seasoning mixture and toss. 5. Spread on sheet pan. Place lemon wedges evenly on the sides. 6. Bake for 8 minutes. 7. Meanwhile combine shrimp, 1 T oil, 1/2 t paprika and 1/2 t Creole seasoning in a bowl. Marinate for a few minutes. Add to sheet pan and mix. 8. Return to oven and bake another 6-8 minutes. Remove lemon wedges and garnish with parley and green onions.
