2 cups sugar
1½ cups vegetable oil
2 cups -purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
¾ teaspoon nutmeg
3 cups finely grated carrots
Frosting:
4 cups powdered sugar
2 8-oz packages cream cheese
½ cup unsalted butter, softened
4 teaspoons vanilla

Directions:
Directions:
Preheat oven to 325º. Line bottom of 3 round pans with wax paper; grease lightly. Beat sugar and oil first, then add eggs one at a time. Sift in powdered ingredients. Stir in carrots. Bake 45 minutes.
Beat frosting ingredients until creamy. Spread on cooled cake.
