2 medium zucchini, cut in half vertically, then sliced about 1/4" thick
2 Portobello mushrooms, diced
2 cloves garlic, chopped
1/2 cup fresh basil leaves (optional)
Salt & pepper
Any type of dry pasta

Directions:
Directions:
Saute zucchini, mushrooms, garlic, salt & pepper in generous amount of olive oil on medium/low heat. Add basil leaves last.

Cook pasta according to package directions. Drain cooked pasta saving some of the pasta water in case the sauce is too thick, the water can be used to thin it out a bit.

Toss the sauce with the pasta and add Parmesan cheese to each serving.
