Ingredients: For sponge: 6 ounces margarine/butter (about 3/4 cup) 71/2 ounces caster (white, refined) sugar (about 1 cup) 6 ounces self-raising flour (about 1 1/2 cups) 3 large eggs 3 dessert spoons cocoa 6 dessert spoons hot water
For filling: 2 ounces butter Icing sugar to taste Cocoa and hot water to taste Crumbled Dairy Milk Flake (chocolate bar)

Directions:1. Melt cocoa in hot water and leave aside to cool. 2. Cream margarine and sugar. 3. Beat in eggs and coca mixture alternately, adding a little flour. Fold in rest of flour. 4. Divide batter between 2 well greased 8 inch tins and bake for 20-25 minutes at 180 C (about 350 F). 5. Meanwhile, cream butter with icing sugar, add cocoa mixture, crumble in Milk Flake bar and use to sandwich the cakes together. You can sprinkle icing sugar on the top, or use a chocolate water icing. |

Notes: "What a lovely idea to make a family recipe book! The Cadbury's Milk Flake is a sort of crumbly chocolate stick that you can crumble to make the icing have a bit of 'bite'. Not sure if you can get it in Canada, it might be a typically English thing, but I'm sure there is something similar. Even chocolate drops would probably do. The recipe came from Glenburn Methodist Church ladies group - this was my parents' church, and mine when I was in Belfast, and they were active members until they became too old. So it's a recipe with all sorts of memories!" - Roberta
