"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

3/4 tbsp mustard seeds
3/4 tbsp cumin seeds
2 dry red chillies
Curry leaves
Cilantro

Directions:
Directions:
1. Wash the dal a minimum of 3 times and put all the above ingredients and 5 cups of water and pressure cook in instant pot for 6 minutes.(If it's pressure cooker, go until 3rd whistle & then turn the flame to low for 3 minutes & switch off the gas). Let the pressure naturally release.
2. Heat the oil in a small vessel, put in crushed garlic then mustard seeds, and once the mustard seeds splatter, then randomly break in red chillies followed by cumin seeds and once fried, put in the curry leaves.
3. Combine tadka ingredients, and put in the dal & garnish with cilantro.

(If you want the dal more watery, then boil the water in tadka vessel & put it in dal. Also, once the dal is cold it becomes thick, you can warm it & add more water if need be.)

Serve with cooked rice!
