20 cups grated Zucchini
8 cups grated Onions
¼ Cup pure granulated Salt or pickling salt

¼ Cup pure granulated Salt or pickling salt
4 ½ Cups white Vinegar
9 Cups white Sugar
2 TBSP (each) Nutmeg, dry Mustard, Turmeric and Cornstarch
1 Tsp Pepper
2 Tsp Celery seed (or 2 tsp Celery salt)
2 (each) Green pepper and Red pepper

Put zucchini and onion into a large non-metal bowl. Sprinkle with 1/4 cup salt and mix well. Let sit overnight in a cool place.

Next morning, fill bowl with water to dilute then drain and rinse vegetables in cold water, dilute, drain again and put in large kettle with remaining ingredients. Bring to boil and simmer, uncovered, stirring occasionally for 30 minutes (until desired consistency like bottled hamburger relish).

Pour into hot sterilized jars and seal with two piece metal lids. Let rest until seals are secure. Store in cool, dark place. Mellow at least one month.
