o 4-6 baby potatoes
o 1 tablespoon butter
o 1 tablespoon parsley, chopped fine
o salt & pepper to taste

Directions:

• Place potatoes in a pan of water and bring to a boil. Simmer until soft, then drain.
• Return pan with drained potatoes to burner over low heat. Add butter, salt & pepper to taste.
• Stir and add parsley sprinkled on top
• Serve
