10 eggs
1 stick butter, melted
1/2 c flour (can use rice flour also)
1 t baking powder
1/4 t salt
1 lb cottage cheese, small curd
1/2 lb shredded Swiss cheese
1/2 lb shredded Monterey Jack cheese

Directions:
Directions:
Whip eggs until fluffy. Add all other ingredients and mix well. Pour into greased 9 X 13 pan. Bake at 400' for 15 minutes, reduce heat to 350' for 35 to 40 minutes.

I add cooked ham, bacon pieces, or cooked sausage sometimes. Can change the cheese to Pepper Jack and/or Cheddar.Have added diced green chilies also.
