1 lb. medium shrimp medium (41 - 50 count) or large (31 - 35 count), peeled and deveined*
2 chopped bell peppers (red, green, or yellow; I like a mix of two colors)
1 chopped yellow onion
6 - 8 cloves minced garlic
1/4 cup sauterne wine (or other white wine)
Zest from 1 lemon
Juice from 1 lemon
10 - 12 fresh basil leaves, sliced 1/16" wide (OR use dried basil, 1 - 2 tsp.)
3 - 4 fresh tomatoes, diced (OR 1 can diced tomatoes; OR you can use one pint of cherry tomatoes; cut each one in half)
1/2 - 1 tsp. cayenne pepper (depending on how spicy you like it)
Spaghetti or linguine noodles
Freshly grated Parmesan cheese (optional)

Clean the shrimp and set aside. Zest and squeeze the lemon. Wash and slice the basil leaves (if using fresh).
Saute the bell pepper, onion, and garlic over medium heat in 2 tbsps. butter melted into 1/8 cup olive oil until vegetables are softened.
Add shrimp and cook until pink and curled. Add wine; cook two more minutes. Lower heat to medium-low. Don't overcook or shrimp will be rubbery.
Add basil and lemon zest and cook one minute more.
Add fresh tomatoes and heat until warm. (If using canned tomatoes, heat until warm and any added liquid has evaporated.)
Add cayenne pepper and stir in.
Add fresh lemon juice and stir in. Turn off heat.

Serve over spaghetti or linguine noodles. Sprinkle with freshly grated Parmesan cheese if desired.

Variation: add 1/2 cup heavy cream with the wine and cook until reduced by about half, approximately 8 - 10 minutes. If using the heavy cream, the canned tomatoes work better.

*You can buy either size of shrimp. I usually buy the ones that are already deveined, and I just have to peel them. If they're on sale, I buy the ones that are already peeled and deveined (a real time-saver!). You can also cut each shrimp in half to make eating easier without cutting the shrimp on your plate. They also cook even faster if cut in half.
