½ pound wheel of Brie at room temperature
1 sheet frozen puff pastry thawed
1/3 cup dried cherries chopped
2 tsp chopped thyme (fresh)
1 TBS melted butter
Sliced or chopped Almonds for topping

Directions:
Directions:
Preheat oven to 425

1. Chop off top rind of Brie and discard
2. Melt butter
3. On parchment or waxed paper, roll out pastry to 12 inch square & cut 2 6 inch rounds
4. Put 1 of pastry rounds on small rimmed baking sheet
5. Sprinkle half of cherries and thyme on pastry
6. Set Brie rind side DOWN on top of pastry/cherries/thyme – leaving ½ inch border of pastry around the edge
7. Sprinkle with remaining cherries & thyme
8. Put remaining pastry round on top
9. Crimp edges of 2 pastry rounds
10. Brush butter on top of pastry
11. Put almonds on top
12. Bake for 20 minutes; let it rest for 20 minutes. (if almonds get too brown, put foil over just them mid way through baking
13. Serve with crackers or plain
