Package of assorted finger potatoes (substitute any tiny potatoes)
Olive oil (about ¼ cup or less)
Fresh Sage, sprig
Fresh Rosemary, 2 four inch sprigs
Fresh Thyme, 2 sprigs
Sea salt

Directions:
Directions:
Wash potatoes and put into a ziplock bag. Add olive oil and spices other than salt. Rub spices between finger and thumb to release their oils. Leave on counter for at least 2 hours, turning bag over several times. Preheat oven to 450º. Pour contents of ziplock bag on rimmed cookie sheet and sprinkle liberally with sea salt. Bake for 20 minutes,

These potatoes are so good and require no butter, sour cream or anything else. Easy and good!
