1 lb pork tenderloin, cut into 1-inch cubes
1 tablespoon Cajun seasoning mix
2 tablespoons olive oil, divided
1/4 cup butter
1/4 cup chicken broth
Juice of 1/2 lemon
4 cloves garlic finely chopped
Red chili pepper flakes, optional
Fresh chopped parsley

Pat dry the pork cubes. Sprinkle them with Cajun seasoning and toss to coat well. Heat 2 teaspoons oil in a skillet over medium-high heat until hot. Sear the pork bites for 2-3 minutes on each side until edges are crispy and browned. Remove the browned pork bites from the skillet and set aside. Reduce heat to medium. Add butter to the skillet and heat until melted. Sauté the chopped garlic for about 30 seconds, while scraping up any browned bits from the pan. De-glaze with lemon juice and chicken broth. Toss pork bites in the garlic butter sauce to evenly coat. Serve the Cajun butter pork bites sprinkled with fresh parsley and red chili pepper flakes if you like.

This is a Gigi fav, so I make it often. It has lots of other possibilities. Instead of Cajun seasonings, try taco or stir-fry seasonings. Or this; after frying up the pork bites, add a bag of mussels to the pan with a 1/4 cup white wine, cover and steam until the mussels open, a version of Portugal's Pork and Clams. Or this; stuff a soft tortilla with these bites and add your favorite toppings to make pork tacos. Or this; remove the bites to a plate with a slotted spoon, dump 4 ounces of cooked spaghetti into the pan used to cook the pork with a 1/2 ladle full of pasta water, swirl in the pan to coat, plate the spaghetti and top with the pork bites and a drizzling of olive oil.
