Mod 1 Reheat Pad Thai


Ingredients:  
Ingredients:  
o 1/2 med. Onion : your choice of Sweet, Mild, Medium Hot : Red Yellow White (your preference)
0 3 large cloves Garlic
o 2 Large (or 3 med) Mushrooms Crimini, White, Oyster, Button other (YP)
o 10 stalks Cilantro or Parsley (5 stalks)
o LAST night’s PAD THAI – we’re going to transform the hard rice noodles and dry chicken
o Olive (prefer) Avocado or Grape Seed Oil
o Sesame Oil (optional)
Organic Seasonings (preferred) –
o Italian Mix (oregano, basil, rosemary, thyme)
o Black Pepper
o Tumeric (opt.)
o Curry powder (red or yellow)
o Cayenne (opt.)
o 3 Large Eggs

Pour "Olive" to top coat pan and turn to low to med. heat
o 1/2 med. Onion 1/8"- 1/4" slice with skin (save your eyes) and peel, then dice : your choice of Sweet, Mild, Medium Hot : Red Yellow White (your preference)
o use flat of Butcher's knife to squash garlic and easily peel skins, and remove root butt thin slice, then long slice and cross slice (dice) 3 large cloves Garlic
o 1/8" long slice (then in half) 2 Large (or 3 med) Mushrooms Crimini, White, Oyster, Button other (YP)
o use rocking knife to 1/8 -1/4" cut all parts 10 stalks Cilantro or Parsley (5 stalks)

EVENLY spread thin SPICES layer across the veges
o Italian Mix (oregano, basil, rosemary, thyme)
o Black Pepper
o Tumeric powder(opt.)
o sparingly use Cayenne (opt.) unless you want Caliente
o optional uniform drizzle of sesame oil crisscross OR helix the pan
Turn up heat to medium if you haven't already done so
IF YOU WANT just a vege omelet proceed to eggs

OTHERWISE
Turn up heat to medium if you haven't already done so
o ADD about 2 Cups the spread across the semi-cooked veges LAST night’s PAD THAI –
ADD ANOTHER LAYER of EVENLY SPREAD SEASONING (salt or no salt to taste)
o Turn up heat and evenly across the pan add about 6 T water
o When noodles are soft thoroughly mix use non-scratch spoon for non-stick pan
o SLIDE veges and PAD THAI to side

o TURN up stove heat
o add 3 eggs whole in pan or prescramble (preference)
o When egg start to form semi solid add vege (AND OR pad thai) mix to top of eggs , for presentation purposes cook separately
o Lower heat to med. low and cook eggs ONLY until done (don't over cook)
SERVE as is or favorite condiment (s) or choice cucumber /tomato.Siracha/mango habenero/ jalepeno lime.. (mine is Classic or Chipotle salsa)

o Lower heat to med. low and cook eggs ONLY until done (don't over cook) leaving veges separate .

The story behind the spices.. besides flavoring ... the qualifier I'm not a health practitioner or medical advisor.. I just try to read and do - seeing the effects on my own health and those around me
Italian seasoning.. oregano may lower the risk of certain types of diabetes
Tumeric may - lower blood pressure, be an anti inflammatory, and anti infective
Curry - see Tumeric
Cayenne - capsican may be an anti inflammatory
Black Pepper - pepperine may increase the absorption of the minerals and vitamins and enzymes and various beneficial compounds that can be had from real food
Eggs - a real protein boost
Olive oil may have properties which benefit cholesterol readings
