¼ cup smoked salt
¼ cup sea salt
1 Tbsp. pepper
1 tsp garlic powder
½ tsp medium chili powder
½ tsp mimita powder (Ethiopian pepper)
⅛ tsp allspice
1 tsp smoked paprika
¼ tsp cumin
¼ tsp tarragon
⅛ sage
1 cup packed brown sugar
1 Tbsp. thyme
1 cup whiskey
1 cup maple syrup
3 dash balsamic vinegar
5lbs. pork belly

Directions:
Directions:
Mix dry spices together well. Coat the outside of the pork belly. Can be a whole piece, chunks or slices. Place coated pork belly in a large ziplock bag. Add liquid ingredients and mix well with pork belly. Allow to cure in fridge for 3-4 weeks, periodically turning bag over and massaging pork belly and spices.

After curing complete, rinse off curing mix. Place in smoker for two hours at 210ºF with wood chips of your choice.

Make sure to rinse the pork belly well before putting it in the smoker. Otherwise it will be very salty and tough.
