3 large ripe bananas
2/3 cups sugar
1 egg
1 egg white
2 tbsp applesauce or 1 small peeled and grated apple
1/4 cup canola or vegetable oil
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 cup chocolate, white or butterscotch chips

Directions:
Directions:
1. Preheat oven to 350 F.
2. Lightly grease or line with wrappers the 24 mini muffin tin.
3. Mash bananas and then add sugar, egg, egg white, applesauce/grated apple and oil, and mix until smooth.
4. Mix together flour, baking soda and baking powder, then barely stir into wet mixture until batter is almost combined, fairly smooth with a few lumps.
5. Stir in chocolate, white or butterscotch chips and pour into muffin tin.
6. Bake 10-15 minutes or until tops are golden and toothpick inserted in middle comes out clean.

Given to them by their neighbour, Julia and Keira love these mini muffins. They are perfect for a quick breakfast or snack. When applesauce is unavailable, grated apple works well in its place.
