2 (15.5 ounce) cans black-eyed peas, drained and rinsed
2 tomatoes, chopped
1 medium sweet onion, chopped
1/2 cup chopped jalapeno peppers
8 fluid ounces Italian dressing
cayenne pepper to taste
2 avocados - peeled, pitted, and chopped

Directions:
Directions:
In a large bowl, mix black-eyed peas, tomatoes, sweet onion, jalapeno peppers, Italian dressing, and cayenne pepper. Stir in the avocados just before serving. Eat with Tortilla chips or other favorite chips. Best when chilled before eating.

Also goes great on eggs or mixed into salad!

When my husband and I spent our first New Year's together, he mentioned that his family had a long-standing tradition on eating black eyed peas as the first food to eat on New Year's Day for good luck.

So, we adopted this delicious dish as our own tradition, slightly modifying it and renaming it from the traditional Texas Caviar to "Kansas Caviar" to honor where my husband is from. This healthy appetizer has been a favorite among family and friends!
