3 packages (3 oz) uncooked ramen noodles
1 pound broccoli florets (approx. 3 cups)
⅓ cup creamy peanut butter
1½ cups of chicken broth
¼ cup soy sauce
2 tbsp sriracha hot chili sauce
1 tbsp sugar
1 small red bell pepper-chopped (can also use yellow or green pepper)
1 large onion chopped
1 tbsp minced garlic

Directions:

1. Fill a pot with water and heat over medium-high heat and bring to a boil.
2. Add the ramen noodles (do not use the seasoning packet) and broccoli and cook for approx. 3 minutes or until the noodles and broccoli are tender.
3. Drain the noodles and broccoli well in a strainer.
4. Next, combine the peanut butter, chicken broth, soy sauce, sriracha sauce and sugar in a large bowl.
5. Add the noodles, broccoli, pepper, onion and garlic to the peanut butter mixture and toss to ensure it has all been coated.
6. Cover and refridgerate for 2 hours and stir occasionally.
