3 lbs boneless pork butt (I had 12 lb pork shoulder with bone so that is what I used)
8 cloves garlic
1/4 c olive oil
1 orange juiced and orange parts of peel removed and cut into thin strips
1 T kosher salt
2 bay leaves torn in half
1 t ground black pepper
1 t ground cumin
3/4 t ground cinnamon
1/2 t Chinese 5 spice powder (I will use allspice next time instead)

Cut pork meat into two inch cubes and roughly chop fat
Mix pork, garlic olive oil etc together in a bowl until pork is coated completely.
Now, Chef John bakes this covered in an oven at 275 degrees. ( I didn't have time to cut up my pork so I set it in my small slow cooker/roaster pan at 275 and let it cook until pork is fork tender) about 3.5 hours.I checked for an internal temperature of 195 ºF.
Let meat sit. (I pulled it and put it in the fridge overnight at this stage)

Set oven rack 6 inches from broiler and preheat the broiler.
I left the juices on the pork. Put pulled pork on a jelly roll pan lined with aluminum foil. Cook meat under the broiler for 3 minutes, drizzle the juice of one orange and one lime over meat. Cook 3-5 minutes until crispy.Transfer pork to serving plate and drizzle the accumulated juices over top.
