2 lbs beef stew pieces
¼ c. oil
1 chopped medium onion
1 (1 lb.) can tomatoes, undrained
3 Tbsp tapioca granules
1-2 (10½ oz) cans beef broth
2 tsp. salt
½ tsp pepper
5-6 carrots, pared and cut in strips or round slices, how preferred
3 medium potatoes, pared and cut as desired
½ c sliced celery

Directions:
Brown beef pieces in oil. Add salt, pepper, part of broth. Cook this for 30-40 minutes in 350º oven in sturdy Dutch oven. Take out of oven and add onions, tomatoes, celery and tapioca. Return to oven for 20 more minutes.

Take out of oven and add carrots. Add more broth. Return to oven for another 20 minutes. Take out again and add potatoes. Add remaining broth.

Return and cook for 30 additional minutes or until potatoes are done to likeness. Don't cook potatoes until they fall apart. I prefer they hold their shape and be on the firm side. Total oven time doing it this way: 1 hour 30 minutes actual oven time, plus time in and out of oven.

You may put all ingredients in at the start, but I prefer to cook in stages according to how long individual vegetables ordinarily take to cook. .
