1 c. sugar
1¼ cups water
1 Tbsp butter
4 Tbsp cornstarch
3 Tbsp cold water
6 Tbsp lemon juice
1 tsp grated lemon rind
3 egg yolks
2 Tbsp milk

Meringue
3 egg whites
6 Tbsp sugar
1 tsp lemon juice

Directions:

Pie:
Combine sugar, water, and butter; heat until sugar dissolves. Add cornstarch blended in 3 tablespoons cold water. Cook slowly until clear and looks transparent, about 8 minutes or less. Add lemon juice and rind; Cook 2 minutes. Slowly add egg yolks beaten with milk. Bring back to boiling point. Pour into 8-inch baked pastry shell or graham cracker crust. Cool until at room temperature. Spread with Meringue.

Meringue:
Beat egg whites stiff but not too dry; Add 2 tablespoons sugar. Beat again; add two more tablespoons sugar; beat again and then add 2 remaining tablespoons sugar. Beat in 1 teaspoon lemon juice. Spread over pie and bake in moderate over (350º) 15 minutes or less until meringue is nicely browned.
