4 small or 3 medium zucchini
½ cup seasoned breadcrumbs
1 cup grated or shredded Parmesan cheese
½ teaspoon dried rosemary
½ teaspoon red pepper flakes
¼ teaspoon salt (optional)
¼ teaspoon ground black pepper
1 - 2 large egg(s)
olive oil
good quality tomato sauce (preferably arrabiata)

Preheat oven to 400º F

Lightly grease a large cookie sheet with Olive oil.
Combine bread crumbs, cheese, salt, pepper, rosemary and red
pepper flakes in a shallow dish.
Lightly beat the eggs in a second dish.
Cut the zucchini in half lengthwise and then each half into 3-4 inch long 1/2 in thick strips.
Dredge each strip into the egg and then the breadcrumb mixture and then arrange on the greased cookie sheet.
Bake in the oven for 8-10 minutes, then turn the squash over and bake for an additional 5-7 minutes until golden brown.
Transfer to a platter and serve with the tomato sauce.

This is a healthy munch-able option that we enjoy often. I TRUST this recipe to be healthier than a lot of traditionally fried options. Our family looks forward to each other making it, since it is a tried and true favorite - plus it is easy to make!
