3 c. cooked, deboned and flaked lutefisk
2 eggs, beaten
2-3 c. cooked long-grain rice (1 c. raw)
1/3 c. milk
1/2 t. salt
1/3 c. butter, melted

Directions:
Directions:
Fold all ingredients together and pour into a greased 2 ½ quart casserole. Bake at 400 degrees for 30 minutes or alternatively bake at 350 degrees until bubbly and lightly browned. If using a glass casserole reduce heat by 25 degrees. Serve with additional melted butter. Serves 8.

This is really good and a great dish for smorgasbords. It is a good way of using leftover lutefisk and is well tolerated by skeptics. Cooked, flaked cod may be substituted for the lutefisk. It is based upon the traditional Scandinavian fish puddings.
