2 lbs. boneless, skinless chicken breasts, cut in strips
2 T. oil
1 T. curry powder
1 onion, sliced
14 oz can coconut milk
14 oz can stewed tomatoes
8 oz can tomato sauce
1 t - 2 T. sugar depending upon taste
1/2 oz. cilantro, finely chopped
salt and pepper to taste

Directions:
Directions:
Heat oil over medium heat. Add onion and cook for 2 minutes.
Stir in sliced chicken and curry powder. Cook over medium heat for 8 minutes, stirring occasionally until chicken is no longer pink.
Add other ingredients. Stir well. Cover. Reduce heat to simmer.
Cook 35-40 minutes, stirring occasionally.
Add salt and pepper to taste.
Serve over rice. Garnish with additional cilantro
