2-3 lbs frying chicken, cut into pieces (can use chicken breasts if desired)
16 oz. bottle of Italian Dressing
12 oz. jar of apricot preserves
Directions:
Directions:
Wash and pat dry the chicken. In covered dish, marinate the chicken in
the dressing overnight in the refrigerator. Heat the oven to 325. Remove
the chicken from the marinade and save 1 cup of the marinade. In a small
bowl, combine 1 cup marinade with the apricot preserves; mix well. Brush
chicken with the marinade mixture; place skin side up (if chicken has skins
on them) In a 9 x 13 pan. Pour marinade left over marinade chicken. To
prevent over baking, cover with foil. Bake at 325 for 30-40 minute or until
the chicken is tender and done.
