"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
½ cup dried hibiscus flowers
1 quart water
¼ cup honey or other sweetener
3 T fresh lime juice

Directions:
Directions:
Bring the hibiscus flowers and water to a boil in a large pot. Once water comes to a boil, turn off the heat and cover the pot. Let steep for 15-20 minutes then add honey and lime juice and mix until completely combined. Strain and enjoy warm or refrigerate and drink cool.
Alternatives to honey can be agave syrup or maple syrup or even sugar. The taste will be slightly different depending on which sweetener you use.
You can decorate with a sprig of mint, which will add another smell and taste dimension.

Personal Notes:
Personal Notes:
I don't remember drinking this as a child, but the first time I went to El Paso after living in France, Cuca made this cold and possibly sweeter than I now make it. Some time later, Claude and I went to Egypt, and behold, it was served for breakfast (called karkadé), in the place of orange juice. I make this mostly during the summer, as it's not only refreshing but so beautiful!
