1 chicken fryer cut into pieces, salt and pepper, extra virgin olive oil, 1 small onion sliced, 1/2 c white wine, 3tbs lemon juice, 1 lemon cut in half, 4 garlic cloves minced, 1tsp fresh minced oregano or 1/2 tsp dried, 2tbsp flat leaf parsley chopped

Rinse the chicken parts in cold water and pat dry with paper towels.Sprinkle chicken with salt and pepper. Place 2-3 tbsp of oil in large saute pan over medioum heat. When oil is hot,add chicken and onion and saute until chicken is golden brown on both sides.
Place the chicken in a stockpot. Add the wine,lemon juice, lemon halves,garlic and oregano.Season with salt and pepper to taste. Mix well and simmer for 45 minutes.Gradually add water to the pot if necessary to prevent sticking. When chicken is cooked throug place on a serving platter along with juices.
Garnish with parsely and serv immediately
