Preheat oven to 450ºF.
Wash and peel potatoes if desired. Cut into 1” to 2” pieces. For mini potatoes, half or quarter them depending on size.
Place on a parchment lined baking sheet. Toss with a drizzle of olive oil. Season with seasoned salt and pepper to taste. Arrange in a single, even layer.
Bake in the oven for 20 to 25 minutes, turning halfway, until browned and fork tender.
