2 tsp. Butter, or as needed
1/2 pkg. Bacon, cut in half lengthwise
Or 2 c. Breakfast Sausage Crumbles
2 c. Shredded Hash Browns (Simply Potatoes)
3-4 Green Onions, finely chopped, greens and all
1/2 tsp. Salt
1/2 tsp. Black Pepper
8 Eggs
3/4 c. Milk
2 c. Shredded Cheddar or Mex. Cheese

Directions:

Preheat oven to 350 degrees.

Cook bacon, or breakfast sausage, in large cast iron skillet over med-high heat. Drain, dry with paper towels and set aside.

Add onions to hash browns stirring to combine.

Liberally spray 9"x9" baking dish/tin with cooking spray. Layer hash brown mix evenly and cut several butter pats over top. Place in oven and cook until hash browns begin to brown. Remove and layer bacon, or sausage, over top.

Whisk eggs with milk, salt and pepper, then pour over casserole and top with cheese. Bake 20-25 minutes, or until top is bubbly. Remove and let stand for 5-10 minutes before serving.

Serve with salsa, sausage gravy, etc., in ramekins.
