1 lb Chicken Cutlet
1/4 c flour
1/4 grated Parmesan Cheese
1/2 t salt
1/2 t course pepper
2 T olive oil
2 c sliced onion rounds
4 garlic cloves minced
1 c mushrooms quartered
3 fresh basil leaves julianned
4 T while wine
4 T water
2 T fresh parsley

to prepare for freezing:
1. Bag chicken cutlets in quart size baggie
2. in a snack size baggie add flour, Parmesan cheese, salt & pepper
3. In a gallon baggie put mushrooms & sliced onion
4. In a Snack size baggie add wine, water, parsley & basil

Thaw in Refrigerator

Dredge chicken in flour mixture. Reserve any remaining flour mixture.
In a skill heat 1 T oil add onions and mushrooms saute until onions are softened about 5 minutes. Set aside. In same skillet, add 1 T oil brown chicken about 2 minutes on each side. Set aside. Whisk in reserved flour mixture and add wine mixture and whisk together. Return chicken and bring liquids to a boil. Return mushroom mixture and heat. Serve with angle hair pasta
