6-10 lemons
Kosher salt

Wash lemons and cut into quarters.
Layer in mason jar, sprinkling with kosher salt between layers
You can press them down and pack the lemon in tightly.
Seal jars tightly. Leave on counter for 3 weeks, inverting each day.
After 3 weeks, place in refrigerator to be used in pieces.

Alternatively, you can purée in blender. In this way you simply spoon out what you need.

Preserved lemons are have both a salty and citrus quality and are perfect added to just about any dish. Especially good on fish, chicken and dressings.
