1 yellow onion
4 carrots
3 ribs celery
1 sweet potato
1 (15 oz.) can black beans
1 (15 oz.) can petite diced tomatoes
1 cup brown lentils
1 tsp. cumin
½ tsp. paprika
Fresh black pepper
Minced garlic, to taste
4 c. vegetable broth
1 tbsp. olive oil

Directions:
Directions:
Dice onion and mince garlic. Start sauteing with olive oil in large pot. Dice other vegetables and add to pot. Drain and rinse black beans and add to pot with lentils, tomatoes and remaining ingredients. Stir and bring to boil. Once boiling, turn heat to low and let simmer (covered) for 30 minutes. Test lentils for doneness and add salt if desired.
