APPLESAUCE |

Ingredients: |
Ingredients: 10 C. mountain apples, peeled and diced 2 C. water 1 C. sugar 2 T. cinnamon

Directions: |
Directions:Place all ingredients in a large pot. Stir and put on low heat. Cover and simmer until apples are soft and water has evaporated, about one hour. Add more water while cooking, as needed. |

Applesauce Bread |

Ingredients: 1 C. applesauce 1 egg, beaten 1/4 C. oil 1/3 C. yogurt 1 tsp. vanilla
2 C. flour 1/2 C. sugar 1 tsp. baking soda Dash of salt

Directions: |
Directions:Preheat oven to 350ºF. Mix together wet ingredients and dry ingredients in two separate bowls, then combine. Pour into a well-greased loaf pan. Bake for one hour or until tester comes out clean. |

Apple Pie Filling and Topping |

Ingredients: Crust One unbaked 9" pie crust
Filling 3/4 C. sugar 1/4 C. flour 1 tsp. cinnamon 1/2 tsp. nutmeg Dash of salt 6 C. apples, peeled and sliced
Topping 3/4 C. flour 3/4 C. oatmeal 3/4 C. brown sugar, packed 3/4 C. cold butter

Directions:Preheat oven to 375ºF. Mix filling ingredients together and place in the pie crust. Crumble topping ingredients together and mix well. Cover the pie with topping. Bake for about one hour. |

Mountain Apple Pie |

Ingredients: |
Ingredients: 5 C. mountain apples, peeled, cored and sliced 1/2 C. white sugar 1/4 C. brown sugar 1 tsp. ground cinnamon 1/2 tsp. salt 3 T. unsalted butter 1 lemon, juiced 3 T. tapioca OR 1/4 C. flour 2 unbaked 9-inch pie crusts
Egg wash: 1 beaten egg 2 T. milk or cream

Directions: |
Directions:Preheat oven to 375°F. Cook apples, sugars, cinnamon, salt, butter and lemon juice in a pan until half done. Remove from heat, stir in tapioca and let cool. Place one unbaked pie crust in bottom of pie dish and add cooled apple mixture. Place top crust over pie, sealing the sides of the crusts together with a fork. Cut a vent in the top crust. For a glossy crust, brush top of pie crust with egg wash. Bake for about 45 minutes. Cool before slicing. Serves 8.
