2 quarts water
1/4 cup kosher salt
3 to 3-1/2 pound chicken

SPICE RUB:
1 tablespoon sugar
1 tablespoon paprika
1 tablespoon garlic powder

Directions:
Directions:
Heat 2 cups of the water and add the salt to dissolve. Add the rest of the water. Put the water in a pot or bowl along with the chicken, so the chicken stays submerged in the brine. Soak overnight. The next day, preheat oven to 350 degrees. Wash and dry the chicken thoroughly. Combine the spice rub and rub all over the chicken. Tuck the wings back. Put the chicken on a rack in a roaster, and roast until the juice of the thigh runs clear when pierced with a fork or a meat thermometer registers 165 degrees, about 1-1/2 to 2 hours. Remove the chicken from the oven and let sit 10-15 minutes before carving into pieces.
