Preheat the oven to 350 degrees. Wash the chicken inside and out, and pat it dry. Season the chicken with salt and pepper, inside and out. Tuck the wings back. Put the chicken on a rack in a roaster, and roast until the juice of the thigh runs clear when pierced with a fork or a meat thermometer registers 165 degrees, about 1-1/2 to 2 hours. Remove the chicken from the oven and let sit 10-15 minutes before carving into pieces.

This is a easy way to cook chicken, just dress it up and pop it in the oven. A rack is important to ensure even cooking. Use leftover parts to make chicken stock.
