1 whole cut-up frying chicken or 6-8 drumsticks
3/4 cup fine breadcrumbs
1/4 cup all-purpose white flour
3 tablespoons cornmeal or rice flour
1 teaspoon black pepper
1 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
2 tablespoons unsalted butter

Directions:
Directions:
Salt the chicken and refrigerate for 2 hours. Preheat the oven to 375 degrees Fahrenheit. Butter an 11 x 13-inch baking dish. Rinse the chicken and pat dry. Put the dry ingredients in a large zip-lock bag and shake to mix. Add the chicken and shake to coat. Put the chicken in the prepared pan skin-side down. Dot with the butter. Bake 20 minutes at 375 degrees. Remove the chicken from the oven and turn the pieces over. Bake an additional 35 minutes. Remove the pan from the oven and remove the chicken breast(s) to a platter (they will be done). Return the pan to the oven and bake the remaining chicken another 15-20 minutes.
