4 boneless skinless chicken breast halves

All-purpose white flour
2 tablespoons olive oil
1 tablespoon unsalted butter

Heat a large cast-iron skillet over medium heat. One at a time, put the chicken between 2 pieces of plastic wrap and lightly pound to a more even thickness, using a meat mallet or a small skillet or even a rolling pin. Have plenty of paper towels on hand to keep everything free of chicken juices. Sprinkle both sides of the chicken with salt and pepper. Put the oil and butter in the skillet. Dip the chicken in flour, patting off excess flour. Once the oil/butter is hot and sizzling, fry the chicken until each side until brown, about 4 minutes per side, and the chicken is cooked through. You can add more butter or oil if needed.

Serve as is or with gravy or tomato sauce.

I keep a bag of frozen skinless, boneless chicken breasts in the freezer. They are easy to thaw out in the microwave and make a pretty quick dinner.
