1-2 onions, peeled and cut into slices
2 pounds boneless beef round steak, cut into serving-size portions
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons oil
2 tablespoons butter
1/2 pound mushrooms, sliced
2 10-3/4 ounce cans condensed cream of mushroom soup, undiluted
1 cup water

Preheat oven to 350 degrees. Oil a roaster and spread a layer of onion on the bottom. Pound the steak with the flat side of a plate or a meat mallet until tender and about 1/3 inch thick. Combine the flour, salt and pepper, and dredge the meat in the flour. If you have time, put the meat on a rack and refrigerate 1-2 hours (this will help the flour adhere to the meat). Heat a large skillet over medium high heat. When hot, add half the oil and butter, and brown the meat in batches. Transfer the meat the roaster. After all the meat is browned, spread with another layer of onion and sprinkle with the mushroom slices. Combine the 2 cans of soup with the 1 cup of water and pour over all. Cover and bake until tender, about 1-1/2 to 2 hours. Serve with mashed potatoes, rice or buttered noodles.
