Ingredients: 1/2 cup PLAIN mashed, cooked sweet potatoes (poke potatoes & cook in microwave like baked potatoes) 3/4 cup Water 1 Egg - slightly beated 2 cups finely chopped Cooked Turkey/Chicken 2 cups Whole Wheat Flour

Directions:Preheat oven to 350º. Combine sweet potatoes, water & egg, - stirring until incorporated. Add chicken & flour and stir again until combined. Batter will be thick & sticky. Drop batter by level spoonfuls onto parchment lined baking sheets - they spread very little during baking so you can crowd them together more than typical cookies. Using the back of a spoon, flatten the biscuits slightly. Bake until lightly golden brown (which depends on the size of the biscuits) - about 12 - 14 mins for tablespoon sized biscuits, or 11 - 12 mins for teaspoon sized.
Yield about 48 tablespoon sized or 130 teaspoon sized. |

Notes: Great and healthy treat! Also, great way to use up those unwanted leftover bits of turkey or chicken. Cash loves them!
Store in fridge but I freeze them then thaw as needed - due to the poultry addition.
