Ham and Cabbage Soup Recipe

1 medium onion (chopped)
1 stalk celery (chopped)
3 cups hot water
2 cups shredded cabbage
1 bay leaf
2 cups diced cooked ham
¾ cup sour cream
1 tablespoon dried parsley

Directions:
Directions:
Cook onion and celery in a about 2-3 tablespoons of butter in a stock pot. Add plain flour to make a roux along with some salt and pepper (to taste). Stir in water, stirring constantly until mixture is boiling and thickened. Add cabbage and bay leaf and simmer for about 10 minutes or until cabbage is tender. Remove bay leaf.

Stir in ham and cook for about 4 minutes. Gently blend in sour cream and heat for a few more minutes (do not boil). This will serve about 6 people.

I like to serve this with cornbread. If broth is not flavorful enough, you can add a little Good Seasoning Italian Dressing Mix (dry mix). I sometimes also add part water and part chicken broth instead of all water to give it additional flavor.
