1 batch of Blintzes

FILLING:
2 cups dry cottage cheese (or ricotta cheese)
2 egg yolks or 1 egg
1/4 cup honey or sugar to taste
1/2 teaspoon vanilla
1/4 teaspoon cinnamon (optional)
Dash of salt

OTHER:
Butter
Toppings:
Honey
Maple syrup
Sour cream
Yogurt
Applesauce
Fresh berries

Directions:
Directions:
Combine filling ingredients. Put a heaping tablespoon of filling into the center of the blintz and fold it up like an envelope. Heat a large skillet over medium-low heat. Add a pat of unsalted butter. When the butter has melted and starts to sizzled, add the filled blintzes and cook until brown and crisp, about 5 to 10 minutes per side. Alternatively, the blintzes can be arranged in a casserole dish and baked at 375 degrees until hot. Serve with topping(s) of choice.
